The basic cage pedals that come with most cross-country hardtail mountain bikes should be adequate for most riders. If you are concerned about losing your footing on bumpy terrain you might want to consider adding toe clips to the pedals. The toe clips will allow you to lock the toes of your shoes onto the pedals. It takes some getting use to at first. But with practice, you should be able to get your feet out quickly in most situations to avoid crashing. Another option is to consider getting platform pedals. Platform pedals offer a bigger area for you feet and lessen the chance of your feet slipping off the pedals.
